Quick and Easy Cochayuyo Ceviche
This recipe combines the unique flavor of cochayuyo seaweed with a classic ceviche style.
Ingredients:
- 3 cups cochayuyo
- 1/2 red onion, chopped
- 1/2 cup yellow pepper, chopped
- 1/2 cup red pepper, chopped
- 2 teaspoons ají amarillo (yellow chili pepper), minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1 cup unsweetened coconut milk or cream
- 1 cup cold water
- Juice of 1 lemon
- A handful of watercress
Instructions:
- Combine all ingredients except lemon juice and watercress in an Instant Pot.
- Seal the lid and pressure cook on high for 1 minute.
- Allow the pressure to release naturally.
- Stir in lemon juice and garnish with watercress. Serve immediately.
