Make A Cochayuyo Salad
Ingredients:
- 2 cups diced cochayuyo (use the lighter variety)
- 1-3 minced garlic cloves
- 1 tablespoon minced ginger
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions:
Combine olive oil and lime juice in a bowl. Stir well. For a substitute, lemon juice or bottled citrus juice can be used. Add minced ginger, garlic, salt, and pepper to the dressing. Mix thoroughly. Toss the diced cochayuyo with the prepared dressing.
