Cochayuyo Burgers
Ingredients:
- Dried cochayuyo
- Onion
- Cumin, oregano, hot paprika or meral (to taste)
- Fig (optional)
- Cilantro
- Egg or oats
- Salt (optional)
- Olive oil
Instructions:
- Prepare the Cochayuyo: Cook the dried cochayuyo in a pot of water for 20-30 minutes (or less if soaked beforehand). Once cooked, chop and process in a food processor or blender.
- Make the Sofrito: Sauté onion with cumin, oregano, paprika, or meral until softened. Let cool. Optionally, add fig and combine with the processed cochayuyo.
- Form the Burger Patty: Blend the cochayuyo mixture with cilantro and optionally an egg or oats as a binder. Add salt if needed, but remember cochayuyo is naturally salty.
- Cook the Burgers: Shape the mixture into patties. Cook them in a skillet with a thin layer of olive oil until golden brown on both sides. Cochayuyo cooks quickly.
